Corn Bread

I make corn bread to go with red bean seitan chili, as a snack or with soup.
You can also add sauteed onions, diced red bell pepper or some washed sunflower seeds as a variation...
Ingredients:
- 4 cups corn flour
- 2 cups pastry flour
- 1 cup white flour
- 1 teaspoon sea salt
- 2 TBLS baking powder
Wet ingredients:
- 1 cup corn oil
- 3 ½ cups rice dream or soy milk
- ½ cup rice syrup
- For a variation try adding ½ cup of raw, washed sunflower seeds or 1 cup of sauteed onions. Add either, or both in after you combine wet and dry ingredients.
Instructions::
- Whisk dry ingredients together.
- Whisk wet ingredients and then add the dry mixture to the wet.
- With a rubber spatula mix briefly but well.
- Spread into an oiled baking form. No more than 3-4cm thick. (about 1 ½ inches)
- Bake at 1800c or 350f for 30-40 minutes.
