Corn Bread

I make corn bread to go with red bean seitan chili, as a snack or with soup.

You can also add sauteed onions, diced red bell pepper or some washed sunflower seeds as a variation...

 

Dry ingredients:
  • 4 cups corn flour
  • 2 cups pastry flour
  • 1 cup white flour
  • 1 teaspoon sea salt
  • 2 TBLS baking powder
Wet ingredients:
  • 1 cup corn oil
  • 3 ½ cups rice dream or soy milk
  • ½ cup rice syrup
  • For a variation try adding 1/2 cup of raw, washed sunflower seeds or 1 cup of sauteed onions. Add either, or both in after you combine wet and dry ingredients.

Instructions:

  1. Whisk dry ingredients together.
  2. Whisk wet ingredients and then add the dry mixture to the wet.
  3. With a rubber spatula mix briefly but well.
  4. Spread into an oiled baking form. No more than 3-4cm thick.
    (about 1 1/2 inches)
  5. Bake at 1800c or 350f for 30-40 minutes.
