In 2012 the East West Centre is offering what will be the second annual Level One Chef Training Program this course is great preparation for those interested in careers in health-spas, restaurants, private cooking, cooking for groups, catering, teaching, and a variety of entrepreneurial pursuits.
This 10 day course is designed to further the education of those wishing to increase their overall knowledge of natural food cooking. While one can learn a lot in 10 days it takes time to develop your skills as a chef and this is only possible if you continue to study and practice, practice, practice!

To provide students with the information and the culinary skills necessary to succeed in the rapidly expanding field of food and health. To supply students with knowledge and and understanding necessary to make dietary choices that support your health needs as well as the health needs of your clients. To empower students to maximize their creative potential by giving them the tools to develop fulfilling careers in the health supportive culinary arts.

Location
The East West Centre is located on a renovated farm in the beautiful Belgian Ardenne.
During your breaks you can take walks or just relax and enjoy the natural beauty of the surrounding meadows and forests.

Program Content
There will be theory, demonstration and hands-on classes.
Practical skills:- setting up a kitchen for functionality and usability
- preparation for groups
- cutting & cooking techniques
- knowing your ingredients
- stocking and storing both fresh and dry ingredients
- estimating quantities
- using left overs
- timing yourself in the kitchen and much more!
- We will cover the preperation of grains, beans,
a wide variety of vegetables, sea vegetables, salads,
soups and vegan & sugar free desserts.
- Provide you with background information about the
philosophy behind this style of cooking and how to put
together meals that are both delicious and balanced.

- Develop the ability to identify a broad spectrum of natural ingredients, as well as expertise in their selection and handling.
- Converting recipes from traditional to natural and vegan ingredients.
- How to improve your own health, strengthen your intuition and work together as a team to make food delicious, nourishing and satisfying for body, mind and spirit.
Who Attends this Programme?
If you have a passion for cooking and would like to learn more and ground your understanding and increase both your theoretical knowledge and culinary skills for the preparation of delicious food that is nourishing and healthy then this could be the program for you!
This is a great opportunity to learn from chefs who are experienced in the field of natural food cooking and take a step on your path toward a career in the whole food movement. The course is led by Simone and will be taught by her as well as other experienced chefs.
Placement support is possible once you’re cooking has reached
the required standard.

Simone Parris
Simone has been cooking for 20 years in many different capacities and her passion is creating healthy balanced meals using the wide variety of tastes and flavours of the many well loved culinary traditions from around the world.
There will also be a selection of top vegan chefs contributing their wisdom and expertise to the curriculum. This combination of chefs makes this a unique opportunity to learn about whole food cooking from different perspectives.
Cost
The cost of the programme is 1295.00 Euro which
includes course fees, room and board
