What About Oil
Fats and Oils act as major structural components in the membranes which surround the body's trillions of cells. They are an important source of energy for the body and have important functions in the building and maintenance of healthy cells. Fats and Oils are separated into two main classifications:
Saturated fats are found mostly in animal products. These fats tend to stick together and deposit within the cells, organs, and arteries. If eaten in excess, this clumping of saturated fats can cause numerous health problems.
Unsaturated fats are found mostly in nuts, seeds, grains and vegetables. These fats lubricate the body. They allow the molecules within the cell membranes to make and break contact with one another as they fulfil their important chemical and transport functions.
Excess intake of these unsaturated fats, however, can also cause health problems. It is Important to choose unrefined organic quality cooking oil. I choose untoasted sesame oil, toasted sesame oil, olive oil and sunflower oil.
All of these oils are good for cooking only it is important not to overheat them - if the oil smokes or burns it is better to discard it and start over. Oil becomes carcinogenic when it burns!
For deep frying I use organic deodorised sunflower oil - this oil is refined but I find that for deep frying it is better to use a refined oil that doesn't have so many vitamins and minerals that can easily burn.
For baking I also recommend the organic deodorised sunflower oil, corn oil also works well for baked goods but it is often difficult to find organic corn oil.
