Sweet Potatoes with Cinnamon
I love baked sweet potatoes either as a dessert like treat or as part of a meal.
Quantities depends on the size of your party…
Ingredients:
- Sweet Potatoes or Yams – scrubbed and cut into large chunks – about 5-6cm in diameter
- Sunflower Oil – deodorized sunflower oil works well for roasting as it doesn’t burn so easily
- Maple syrup
- Ground Cinnamon
- Sea Salt
Instructions:
- Preheat Oven to 180c or 330f
- In a mixing bowl combine the sweet potatoes or yams with a little sunflower oil, enough to coat them and make them shiny but not too much!
- Now Toss with a little maple syrup about the same amount as the sunflower oil or a little less. The oil locks in the moisture of the potatoes and the maple syrup gives them a maple flavour and some extra sweetness.
- Sprinkle with a few pinches of sea salt, depending on how many potatoes you’ve used, and finally dust lightly with ground cinnamon.
- Place in baking pan, I find Pyrex works well, and roast for about 45 min to 1 hour or until tender and juicy.
Serve hot!
