Roast Parsnips
Thanks to the English Sunday roast tradition I learned how to make roast Parsnips!
They are so easy, delicious and sweet!
Quantities depends on the size of your party…
Ingredients:- Parsnips – scrubbed clean and cut in wedges – first cut the parsnip in 5cm logs and then cut the logs into pieces lengthwise. Often I cut them in quarters but this depends on how thick your parsnips are as you don’t want to cut them too thin – you want them in chunky pieces.
- Olive Oil
- Sea Salt
- Fresh Coriander – washed, dried and finely chopped
Instructions:

Preheat Oven to 180c or 350f

Steam the parsnips with a pinch of sea salt for about 10 min. until slightly cooked but still very firm.

In a mixing bowl toss the parsnips together with enough olive oil to coat them.

Sprinkle with a little sea salt.

Place in baking dish and roast the parsnips for about 30 - 40 min. or until tender and nicely browned.

Serve hot garnished with a few turns of fresh black pepper and sprinkled with the coriander
