Roast Parsnips

Thanks to the English Sunday roast tradition I learned how to make roast Parsnips!

They are so easy, delicious and sweet!

Quantities depends on the size of your party…

Ingredients:
  • Parsnips – scrubbed clean and cut in wedges – first cut the parsnip in 5cm logs and then cut the logs into pieces lengthwise. Often I cut them in quarters but this depends on how thick your parsnips are as you don’t want to cut them too thin – you want them in chunky pieces.
  • Olive Oil
  • Sea Salt
  • Fresh Coriander – washed, dried and finely chopped

Instructions:

  1. Preheat Oven to 180c or 350f

  2. Steam the parsnips with a pinch of sea salt for about 10 min. until slightly cooked but still very firm.

  3. In a mixing bowl toss the parsnips together with enough olive oil to coat them.

  4. Sprinkle with a little sea salt.

  5. Place in baking dish and roast the parsnips for about 30 - 40 min. or until tender and nicely browned.

  6. Serve hot garnished with a few turns of fresh black pepper and sprinkled with the coriander
