Millet Mashed Potatoes with Cauliflower
Serves 4 - 6
You really get the satisfied feeling of mashed potatoes but in a whole grain, complex carbohydrate form!
Try out this recipe and see if you can make the switch to a healthier mashed potato!
Ingredients:
- 1 cup millet washed
- 3 1/3 cups water
- 2 med. onions diced finely
- 1 Tbls olive oil
- 1/2 head of cauliflower washed and cut in med to large flowerettes
- About 1/4 cup soy cuisine (soy cream), for a lighter variation use soy milk
- 2 pinces sea salt
- Small pinch of nutmeg powder
- Small bunch of parsley - washed, dried and finely chopped
Instructions:
On a med. flame bring the millet and water to a boil in a med. thick bottomed sauce pan. - Saute the onion in the olive oil until translucent - about 5 min.
- Add the onion to the millet.
- Add a pinch of sea salt.
- Add the cauliflower and another pinch of sea salt.
- Cover and allow the steam to build up then turn down and simmer for about 35 min.
- Remove from heat and add the nutmeg and soy cream.
- Wisk gently until desired consistency is achieved.
- Serve immediatly with parsley garnish.
