Millet Mashed Potatoes with Cauliflower
Serves 4-6

 

 

You really get the satisfied feeling of mashed potatoes but in a whole grain, complex carbohydrate form!


Try out this recipe and see if you can make the switch to a healthier mashed potato!

 
Ingredients:
  • 1 cup millet washed
  • 3 1/3 cups water
  • 2 med. onions diced finely
  • 1 Tbls olive oil
  • 1/2 head of cauliflower washed and cut in med to large
    flowerettes
  • About 1/4 cup soy cuisine (soy cream), for a lighter variation use soy milk
  • 2 pinces sea salt
  • Small pinch of nutmeg powder
  • Small bunch of parsley - washed, dried and finely
    chopped

Instructions:

  1. On a med. flame bring the millet and water to a boil in a med. thick bottomed sauce pan.
  2. Saute the onion in the olive oil until translucent - about 5 min.
  3. Add the onion to the millet.
  4. Add a pinch of sea salt.
  5. Add the cauliflower and another pinch of sea salt.
  6. Cover and allow the steam to build up then turn down and simmer for about 35 min.
  7. Remove from heat and add the nutmeg and soy cream.
  8. Wisk gently until desired consistency is achieved.
  9. Serve immediatly with parsley garnish.
