Really
chocolaty, not too sweet and the nuts and bits of chocolate add texture
to it's rich moistness.
If you want it
to be on the sweeter side replace the rice syrup with maple syrup,
either partially or completely.
Ingredients:
Dry:
2
3/4 cups 85%
Spelt flour
1/3
cup Cacao powder
1
Tbls baking powder
1/4
tsp sea salt
1/4
tsp vanilla powder or 1tsp vanilla extract
Wet:
1
small jar Amazake 300ml (1 1/4 cup)
2
tsp apple cider vinegar
3/4
cup rice syrup
1/3
cup deoderized sunflower oil
Keep these
ingredients
seperate until
wet and dry
ingredients
have been combined:

1/2 cups washed and lightly toasted walnuts
broken in pieces
1/2
cup 70-85% organic chocolate broken in small pieces
Instructions:
Preheat
oven to 180c or 350f
Oil
and flour 24cm cake pan (91/2 inches)
Oil
cake pan and then dust with flour, tap out any
excess.
Whisk
wet and dry ingredients seperately and then with a
rubber spatula mix the dry into the wet and quickly
combine.
Once
combined add the walnuts and the chocolate pieces.
Spread
into cake pan and bake for about 30 min or
until wooden skewer
comes out clean.
Remove from oven,
let stand 10 min. and then remove to cooling rack or plate to let
cool.
To make a simple chocolate frosting:
Melt
one large organic quality chocolate bar (about 100
grams),
add a pinch of vanilla powder and
enough soy cream (Soy Cuisine) to
make
a
creamy
consistency.
Heat
the mixture double boiler style
and be careful not to heat to much as the chocolate
will
get a grainy texture.
When
mixture is smooth and creamy stir in
3 drops of essential oil of
orange.
